A BIT MORE

Carpe Noctem

Carpe noctem is a latin phrase that means seize the night. A single origin coffee from Colombia, decaffeinated using the ethyl acetate decaf process.

Ethyl acetate is a naturally occurring ester (in this case, derived from sugar cane) that can be isolated and used to decaffeinate green coffee. In the first step, the green coffee is steamed under pressure to prepare the beans to be decaffeinated. Next, the green coffee is placed in a solution of water and ethyl acetate, where the ethyl acetate will bond and extract the caffeine. The solution will be drained and refilled to slowly remove and rinse out the caffeine. In the final step, the green coffee will be steamed to remove any trace amounts of the ethyl acetate. Any remaining ethyl acetate will completely burn off during the coffee roasting process.

Worth mentioning that ethyl acetate is a naturally occurring ester found in many fruits (one banana can have between 2 to 15 milligrams). Ethyl acetate is only harmful to humans at very high doses (400 milligrams or higher).

HOW DO YOU SHIP?

We use USPS Ground Advantage.

WHAT ROAST LEVEL IS YOUR COFFEE?

As you may know, coffee has the potential for complex flavor that can be manifested utilizing the alchemy of roasting. Our goal is to roast you the most delicious coffee possible without being tethered to a specific roast level.

That being said, we will share the roast level in the description of each coffee.

HOW SHOULD I STORE MY COFFEE?

We suggest storing your box of coffee in a cool, dry and dark place. A pantry cabinet works perfectly. Or you can transfer your coffee into a plastic free container, like a glass jar or a metal tin.

Worth noting: be mindful of where you place your box. Because the kraft bag and box have no plastic barrier, if placed on a small spill on your countertop, the moisture can permeate. Not-one-worry if this occurs, just simply transfer the beans to another receptacle and you will be good to go.

HOW LONG DOES YOUR COFFEE STAY FRESH?

If kept in the kraft bag and cardboard box and stored in a cool, dry and dark place, your coffee will remain optimally fresh for up to 14 days after receiving. If you store your coffee in a plastic free container, like a glass jar or metal tin, your beans will maintain their optimal freshness and deliciousness for up to 30 days.

WHEN DO YOU ROAST YOUR COFFEE?

We roast weekly and ship Sunday through Thursday. Orders placed on Friday or Saturday will ship the following Sunday or Monday.

By the time you receive your coffee, the beans will be aged perfectly and ready to brew.
